Peanut Butter Bars

  • 1 cup  reduced fat creamy peanut butter
  • 3 tablespoons   butter or margarine, softened
  • 1 cup  powdered sugar
  • 3 tablespoons   fat free milk
  • 3 cups   Rice Krispies®
  • or 3 cups   Cocoa Rice Krispies®
  • 1/4 cup   semi-sweet chocolate morsels, melted

1. In large mixing bowl beat peanut butter and butter on medium speed until combined. Add powdered sugar and milk. Beat until fluffy. Stir in KELLOGG'S RICE KRISPIES cereal, mixing until thoroughly combined. Press mixture evenly into 8 x 8 x 2-inch pan coated with cooking spray. Refrigerate until firm.

2. Drizzle chocolate over cereal mixture. Refrigerate about 30 minutes or until chocolate is set and cereal mixture is firm. Cut into bars. Store in airtight container in refrigerator.

Yield: 24 bars

As we approached the holidays last year, I began to realize that time and circumstance was not going to allow me to do my usual holiday baking. While my son and I both are trying to lose weight, it just seemed wrong not to have SOME treats for the holidays. So when a family member dropped off a couple of big boxes of Rice Crispies, I called my 12 year old son from work and told him we would make some treats together. He responded enthusiastically, but then admitted sheepishly that he had already opened a box and had a big bowl. I responded that I didn't even know he liked them! Since then, I have learned that having Rice Crispies available in the mornings is one of the easiest ways to lure that boy out of bed for school! Who knew!

1.  1 Way u can make those yummy pb rk is u don't have to use Milk, or powder sugar u can still use the pb , and butter but u can add marshmellos and put it in a long pan and put it all in the oven until the marshmellows and pb melt just a little and have them a little warm so so good.

2. One very yummy modification is to exchange the milk and powdered sugar for 1 cup of honey and then use all regular Rice Krispies (no coco). Mmmm Mmmm! I used this for a desert potluck and put it into a 9x13 pan instead of 8x8 to get more pieces which were thinner instead of the huge chunky ones you get with an 8x8 pan. More to go around :)
